Instant Pot Bún Bò Huế (Huế Beef Noodle Soup)

As a busy working dad, I don’t usually have 6-8 hours to make Bún Bò Huế the normal way so decided to pick up the ingredients and make it in the Instant Pot. No lie, it still took about 2-3 hours including prep work, but still, more than half the normal time was shaved by using the Instant Pot. I consider it a win!

The first time I made BBH using the Instant Pot, I used just oxtails, but for today’s Instant Pot BBH, I made the broth with beef bones and traditional meats like beef shank and pork leg. You can use any meat you like!

The lemongrass beef broth turned out pretty good, rich, and a little on the fattier side. I recommend scooping out some of the fat if it’s too much for your taste or you can leave it for extra flavor. 😛 Assemble BBH bowls with thick vermicelli noodles, and your favorite meat options, herbs, and veggies. So good!

Ingredients:
~4 quarts filtered water, plus more to fill to max line
4 pounds beef bones, parboiled
3 pounds beef shank and pork leg
1 cha lua roll, sliced
1 large onion
3 lemongrass stalks, cleaned and smashed
1 4-ounce daikon, peeled and cut into 2-inch pieces
2 cups pineapple juice, you can blend ¼ pineapple in a blender as well
5 ounces Quoc Viet BBH Soup Base
¼ cup fish sauce or shrimp paste
2 tablespoons chili sate oil, you can buy at an Asian grocery store or make on your own
1 tablespoon sugar
2 teaspoons salt, more or less to taste

Steps:

Make Instant Pot BBH Broth – Gently add parboiled bones, meats, onion, daikon, salt, pineapple juice, and water to the instant pot. Set pressure to Pressure Cook and set cook time to 30 minutes and cook. Quick release and remove the proteins. Cool and slice the proteins. Set pressure to Pressure cook and set cook time to another 30 minutes. Quick release. Remove bones, onion, lemongrass, and daikon. Skim off some fat, Add additional water up to max fill line. Season with Quoc Viet BBH soup base, fish sauce, chili sate oil, sugar, and salt to taste.

Prepare BBH Bowl – Place noodles in a bowl. Top bowl with assortment of meats and top with boiling broth. Garnish each bowl with favorite herbs and veggies.

Tips:

  • I noticed Instant Pot broths can get really fatty, so make sure you scoop unwanted fat that floats to the top of the broth.
  • Use any meat you like! For even quicker BBH, I just use thinly sliced beef and beef balls.
