Preparation:

  1. Stuff each chile with cheese, making sure not to overfill it.
  2. Preheat the oven to 400°F (204°C).
  3. To prepare the batter, beat the egg whites in a large bowl until soft peaks form. Add the yolks, the ½ cup of flour and the salt, beating only until combined.
  4. Heat 4 inches of oil to 350°F (177°C) in a large and heavy skillet.
  5. Place 1 cup of flour on a plate. Coat the chile in flour and then dip it in the batter.
  6. Fry the chiles for about 4 to 5 minutes, turning them as needed until they are golden and crispy. Drain them on a baking rack.
  7. Transfer the chiles to an oven-safe dish or individual dishes, cover with green chile sauce and more cheese. Bake for about 3 minutes until the cheese melts.
  8. Serve immediately.

You can experiment with different fillings such as seasoned ground beef, shredded chicken or even seafood for a coastal version. You can also try different types of cheese to find the flavor that you like the most.
